If we are proud of our “sobrassada” (a spicy sausage made with paprika which is typical of Mallorca), it is because we have spent many hours and travelled far and wide to learn how to make it and learn how to give it our own hallmark flavours and characteristics. The long drying process, the pork meat sourced from Ral, Qualiporc and Duroc pigstock (Free range Iberian female pig), carefully selected paprika and “vi ranci” (a traditional wine similar to sherry in terms of the winemaking process) from the Priorat are some of the key ingredients.
