The “culana” is a higher quality “botifarra” or thick, local sausage in terms of the diversity of the meats used to make it: bacon, jowl, hearts, tongues and a small proportion of meat head. During the cooking process, different local vegetables are added to the boiling water. It is ideal on top of fresh salads and combines well with wines from the DOQ Priorat and DO Montsant.
